我的新烤箱


昨晚终于买了新的烤箱,好开心,因为是boss付钱的。。。哈哈!
我通常在周日烘烘的,可是这个周末加上公假没上班,所以会在妈妈家,就没机会用我的新烤箱了,下个周日再开张吧!

这个Cornell的烤箱是在Tesco买的,因为要靠近Raya了,有promotion, 价格是RM239.00, 是35litre的。
因为我那个旧的烤箱坏掉了,而且我之前烘过比较大盘的蛋糕,结果只有上面一部份和旁边熟吧了,下层和中间都不熟的; 还有烘蛋挞也是上面的蛋液都皱了,下面的皮还是熟不完。。。结果之后我只烘杯子蛋糕,因为杯子蛋糕的体积比较小,容易熟。

想的到就有点paiseh, 我都30有5了,aunty 一个了,才来买新烤箱学烘焙。其实也是为了女儿,她也快6岁了,也开始喜欢吃各种的食物。

唉。。。想想人生没有几个10年吧了,我都过了第3个了,第4个很快就要来的了,要做什么就快点了!


来看看下面用旧烤箱烤的蛋挞,好难看,上面的蛋液都皱了,下面的皮还是熟不完,昏倒!

蓝莓果酱杯子蛋糕


我喜欢烘杯子蛋糕...........
一来吃了就把纸杯丢掉,不用洗。。。
二来女儿看到小小可爱的纸杯蛋糕很开心,会多吃几个的。。。
再来是我的那个烤炉好像有点问题,烤小的蛋糕还好,要是烤大盘的蛋糕,结果只有上面和旁边熟,中间和下面不熟的...

这个简单的蓝莓果酱杯子蛋糕是在之前的某个周日烘的,虽然发得不是很高,可是好松软,好好吃哦!

材料:
A. 鸡蛋 2个, 幼糖 60grams (因为我用的篮莓果酱蛮甜,所以我只用60grams的糖)
B. 3 tbsp 蓝莓果酱, 100grams Plain Yogurt (我用自己做的yogurt)
C. Cake Flour (低筋面粉)100grams + 3/4 tsp Baking Powder (过筛)
D. 食油 60ml

做法:
(1) 预热烤箱 150C
(2) 把 B 混合均匀备用
(3) 把 A 用electric mixer 打发(至到颜色变浅黄白色)
(4) 加入 1 tsp 香草精,用electric mixer搅拌均匀
(5) 加入 B, 继续用electric mixer搅拌均匀
(6) 用spatula分两次拌入 C 至无颗粒(不要过度搅拌)
(7) 加入食油 60ml 搅拌均匀
(8) 盛入纸杯 9 分满 (不会发很高的,我也在上面撒了几颗white chocolate chips), 大约烘10分钟后,看到表面呈微褐时,用牙签插入,要是牙签出来是干净的, 就把蛋糕拿出待凉。 (不要过度烘焙,不然蛋糕会很干)

Moist Banana Cupcake







I baked this banana cupcake for my mum last Sunday, as she cannot tolerate any dairy products, so I used sunflower seed oil instead of butter, and water to substitute in baking these cupcakes.

The cupcakes came out so moist, fluffy and soft, although they didn't rise up and looked a bit flat.







Here is the recipe for sharing:

Ingredients
100g cake flour, 3/4 tsp baking powder, 1/8 tsp baking soda, 1/8 tsp salt (sifted)
2 eggs
60g sugar
90ml water
1tsp vanilla essence
65ml sunflower seed oil
150g mashed banana (I used pisang emas)

Steps
- Preheat oven at 150C
- Beat eggs with sugar (using electric mixer) until triple in volume and the color became yellowish white.
- Add in vanilla essence and mashed banana, mix to combined.
- Using spatula, fold in half of the combined flour and half of water until combined. 
- Fold the the rest of the flour and water, mix to combined, but do not over mix.
- Pour batter into paper cup (can fill until almost full as this cupcake will not rise high).
- Bake until the top portion of the cupcakes turned light brown. Inserted a cake tester, if came out clean, then took out the cake to cool. 

*do not over-bake the cake as they will become dry*
*oven temperature will vary according to respective oven. For my oven, I baked at 120C for about 15minutes*

家喻户晓的ABC汤




女儿和老公最像的一点就是喜欢喝汤。不管是谁褒的汤,还是鸡饭档的汤,或是经济饭档的汤,只要是汤,他们俩就不会放过,哈哈!

所以我在周末通常都回褒汤,不过来来去去只会几种,不是ABC汤,就是冬瓜汤,药材汤,莲藕汤,白萝卜汤,花生鸡脚汤,番茄汤。。。

上个周末就煮了这个简单又营养又好喝的ABC汤,里头放了马铃薯,红箩卜,大葱头,番茄和切成三块的大鸡腿. 另外加上些弄碎的白胡椒,一小块的鸡精块,一些糖和盐调味。
