可可米芝士戚风 Choco Rice Cheese Chiffon


工作日最常做的就是戚风,不然就是满芬和杯子蛋糕,因为不用花太多的时间就可以完成,隔天的早餐就有着落,呵呵!

家看到这款戚风,刚好冰箱里又有材料,就开工了!
原来这款芝士戚风是我常做的其中之一,只是加进可可米。

戚风很轻盈柔软,口感很绵密,好吃!


材料:
(A)
牛奶 - 60g
Cream Cheese - 50g
Cheddar Cheese - 1片
油 - 25g

(B)
特幼粉 - 65g

(C)
蛋黄 - 4 粒

(D)
蛋白 - 4 粒
糖 - 75g
塔塔粉 - 1/4 tsp
 
(E)
可可米 - 40g

做法:
1.  将(A)隔水搅煮至溶化,离火后趁热加入筛過的特幼粉,搅拌均勻,再慢慢加入蛋黄,搅拌均勻。

2. 蛋白加进塔塔粉打,糖分两次加进蛋白打至湿性发泡。

3. 把蛋白霜分成三份,两份分成两次加入芝士面糊里面,反拌均匀;然后再把芝士面糊倒回剩余的蛋白霜里,反拌均匀,再加入可可米均匀.

4. 我的烤箱最下层以170度烘烤40分鐘。

5. 出炉后,蛋糕倒扣待凉才脱模。

  7. 嗨,你好!我是烘培新手,没做过面包。想请问你的面包都是用cosway的面包机做的吗? 好用吗?你只是用它来打面团吗?我看你做吐司用土司模没直接烘,有差别吗?我想买来学做面包^^ ~ 楷麻麻

      cosway的面包机还ok的。比起其它牌子算便宜很多。
      开始时我有用来做面包,把所有材料放进面包机,整个过程大约3.5小时面包就烘好,只是我觉得面包的型状不美,凹凸不平,所以过后就只用来打面团,然后经过发酵,排气,滚圆,捍和整形等等,再用土司模放进烤箱来烘。

      用面包机,烘好后最好马上拿出来待凉,因为面包虽然烘好,在面包机里还是保温着的,要是留在面包机里太久,面包会变得比较干。

      其实做面包很好玩的,希望你也来和我们分享!

  11. Casey: I left a message in my blog but worrying that you won't have time to read it. I want to tell you that you can use lemon curd to fill up a layer cake as well, so you don't have to use whipping cream. So, you decide either to use it to frost your cake or to use it as filling. The chocolate+yellow colour combination always work well together!

      My lemon curd recipe yields 1.5 cups. To be safe, it's better to double up the amount! Remember to whisk the lemon mixture non-stop & vigorously from the beginning!Looking forward to see your cake!And sieve it! Aiyoh, I sound like an "Ah Ma!"

    4. Casey, sorry, I just thought of something. I have a 1 suggestion here, please use 180g butter instead of 160g if you are double up the ingredients. This will make the lemon curd smoothier & easier to spread!It is thicker in texture after being kept in the fridge, you need to use 1 chopstick to stir it, leave it in room temperature b4 it becomes soften!Hope this will help!
